The roasted red peppers, marinated artichoke hearts, black olives, feta cheese, and other vegetables in this Loaded Mediterranean Veggie Sandwich make it taste great. Its a great meal or snack because its the right amount of savory and sour.
Ingredients:
- 1 large ciabatta loaf, sliced
- 1/4 cup basil pesto
- 1/2 cup roasted red peppers, sliced
- 1/2 cup marinated artichoke hearts, drained and chopped
- 1/2 cup sliced black olives
- 1 cup baby spinach leaves
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup sliced red onions
- 1/4 cup sliced cucumber
- 1/4 cup hummus
Instructions:
On one side of each ciabatta slice, spread basil pesto
On the bottom slice of ciabatta, put feta cheese, sun-dried tomatoes, red onions, black olives, baby spinach, roasted red peppers, and artichoke hearts that have been marinated
The other piece of ciabatta should have hummus spread on it
Put the slice with pesto on top of the slice with hummus to close the sandwich
Cut the sandwich into pieces that you want to serve
