These Key Lime Pie Cupcakes by Sugar Plum are a delightful twist on the classic dessert. With a graham cracker crust, tangy key lime filling, and a sweet whipped cream topping, theyre the perfect treat for any lime lover.

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp key lime zest
  • 1/4 cup fresh key lime juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1/4 cup sweetened condensed milk
  • 1/4 cup sour cream
  • Green food coloring optional
  • Whipped cream and lime slices for garnish

Instructions:

Warm the oven up to 350 F 175C and put paper liners in a cupcake pan

Put the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter in a bowl

Make sure the crumbs are covered in butter all over

To make a crust, press the graham cracker mixture into the bottom of each cupcake liner

To press it down hard, you can use the back of a spoon

Mix the flour, baking powder, baking soda, and salt together in a different bowl

In a different large bowl, beat the softened butter and 1 cup of granulated sugar until the mixture is fluffy and light

First, add the eggs one at a time

Then, add the key lime juice, zest, and vanilla extract

Add the dry ingredients three times, mixing them in with the buttermilk each time

Start with the dry ingredients and end with the buttermilk

Dont mix any further than that

If you want the cupcakes to be a certain color, you can add a few drops of green food coloring

Fill each liner about two thirds of the way to the top with cupcake batter

Spread the batter out evenly over the graham cracker crust

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

Use a toothpick or fork to make several holes in the top of each cupcake while they are still warm

Mix the sour cream and sweetened condensed milk together, then pour the mixture over the warm cupcakes and let it soak in

Leave the cupcakes to cool all the way in the pan on a wire rack

After that, put them in the fridge for at least an hour to cool down

After the cupcakes have been chilled, add a dollop of whipped cream and a lime slice to the top before serving
