Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons lime zest
- 2 tablespoons fresh lime juice
- 1 cup whipped cream
- 1 cup lime curd
- Lime slices for garnish
Instructions:
Setting the oven to 350F 175C and putting paper liners in a cupcake pan
Mix the butter and sugar in a bowl until the mixture is light and fluffy
Slowly add the eggs, making sure to mix well after each one
Mix the flour, baking powder, and salt together in a different bowl
Add the dry ingredients slowly to the wet ones, mixing in the milk every so often
Add the lime juice and zest and mix them in well
Put the same amount of batter in each cupcake liner, and bake for 18 to 20 minutes, or until a toothpick comes out clean
Let cupcakes cool all the way down
Put crumbled cupcakes, whipped cream, and lime curd in serving glasses or bowls
Do it again, and then put a dollop of whipped cream on top
Add lime slices as a garnish
Put it in the fridge for at least an hour before you serve it
