Ingredients:

- 5 lbs beef stew meat, cubed
- 4 potatoes, peeled and diced
- 4 carrots, peeled and sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1/4 cup tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley for garnish optional
Instructions:
In a slow cooker, combine beef, potatoes, carrots, onion, and garlic
In a separate bowl, mix together beef broth, tomato paste, thyme, rosemary, salt, and pepper
Pour broth mixture over the beef and vegetables in the slow cooker
Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender
In a small bowl, mix cornstarch and water to create a slurry
Stir the slurry into the stew to thicken
Serve hot, garnished with fresh parsley if desired
