Ingredients:
- 1 can black beans, drained and rinsed
- 8 small corn tortillas
- 1 cup diced radishes
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 avocado, diced
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup vegan feta cheese, crumbled
Instructions:
To make the salsa, put black beans, red onion, cilantro, avocado, lime juice, olive oil, salt, and pepper in a bowl and mix them together
You can heat the corn tortillas up in a pan or the microwave
Put a small amount of the black bean salsa mixture into each tortilla
Add vegan feta cheese crumbles on top
