Slow-Cooker Beef Curry

This slow-cooker beef curry is perfect for busy days when you want a delicious meal without spending hours in the kitchen. Just dump all the ingredients into the slow cooker in the morning, and come home to a fragrant and flavorful curry waiting for you

Ingredients:

  • 2 lbs beef stew meat
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can 14 oz coconut milk
  • 1 can 14
  • 5 oz diced tomatoes
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 cups chopped vegetables such as carrots, potatoes, bell peppers
  • Cooked rice or naan bread for serving

Instructions:

Chicken stew meat, minced garlic, chopped onions, coconut milk, tomato chunks, curry powder, garam masala, ground ginger, ground cumin, ground turmeric, salt, and pepper should all be put in a slow cooker

Make sure to stir everything together well

After putting the lid on, cook on low for 6 to 8 hours or high for 3 to 4 hours, until the beef is soft

Just before serving, add the chopped vegetables and mix them in

Keep cooking with the lid on until the vegetables are soft

Serve hot with naan bread or cooked rice
