Vegan Bottle Gourd Cauliflower Curry

A flavorful and nutritious vegan curry made with bottle gourd and cauliflower, simmered in aromatic spices.

Ingredients:

  • 1 medium bottle gourd, peeled and cubed
  • 1 small cauliflower, cut into florets
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions:

Set a pan on medium heat and add oil

Put in the cumin seeds and let them pop

Put in the chopped onions and cook until they turn golden brown

Cut up some garlic, grate some ginger, and add some green chili

Saut for one more minute

Put in the chopped tomatoes and cook them until they get really soft

Salt, turmeric powder, red chili powder, and coriander powder should all be added

Mix well

Cut up some bottle gourd and cauliflower florets and add them

Mix them so that the spices cover them

Cover and cook, stirring every now and then, for 15 to 20 minutes, or until the vegetables are soft

Add the garam masala and fresh coriander leaves after the vegetables are done cooking

Warm it up and serve it with rice or roti
