Ingredients:
- 1 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- tsp baking soda
- tsp salt
- cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- cup buttermilk
- cup boiling water
- cup semisweet chocolate chips
- cup white chocolate chips
Instructions:
Start by heating the oven to 350F 175C
You can line a muffin tin with cupcake liners
Mix the cocoa powder, baking powder, baking soda, and salt in a medium-sized bowl with a whisk
Mix the softened butter and sugar together in a large bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
First add half of the dry ingredients to the wet mixture
Then add the buttermilk
Finally, add the rest of the dry ingredients
Dont mix any further than that
Add the hot water and mix the batter well until it is smooth
Its okay that the batter isnt very thick
Add the white and semisweet chocolate chips and mix them in
Fill each cupcake liner about two-thirds of the way to the top with batter
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After taking the cupcakes out of the oven, let them cool for 5 minutes in the muffin tin before moving them to a wire rack to cool all the way through
After the cupcakes have cooled, you can frost them or decorate them however you like
