Ingredients:
- 4 skinless, boneless chicken breast halves
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- Sesame seeds and sliced green onions for garnish
Instructions:
In a bowl, mix together soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil
Place chicken breasts in a slow cooker and pour the sauce over them
Cook on low for 4-5 hours or until chicken is tender and cooked through
Remove chicken from slow cooker and shred using two forks
In a small bowl, mix cornstarch and water until smooth
Stir into the sauce in the slow cooker
Return shredded chicken to the slow cooker and cook on high for 30 minutes or until sauce thickens and coats the chicken
Serve hot, garnished with sesame seeds and sliced green onions
