Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup milk
- 1/4 cup peanut butter
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 cup raspberry jam
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions:
In a mixing bowl, combine flour, sugar, baking powder, and salt
In a separate bowl, mix together milk, peanut butter, egg, melted butter, and vanilla extract until well combined
Gradually add the wet mixture to the dry ingredients and stir until a smooth dough forms
Roll out the dough on a floured surface to about 1/2-inch thickness and cut out doughnuts using a doughnut cutter
Heat vegetable oil in a deep frying pan to 350F 175C
Carefully place the doughnuts into the hot oil and fry for 2-3 minutes on each side or until golden brown
Remove the doughnuts from the oil and drain on paper towels
While still warm, make a small hole in the side of each doughnut and fill with raspberry jam using a piping bag or squeeze bottle
Dust the doughnuts with powdered sugar
